Amy and I were asked to house sit for her parents. Sandy said "help yourself to what's in the frig, oh and by the way, that bacon needs to be eaten or it is getting thrown out." That's all I needed to hear.
So its dinner time what are you going to make? This is Iron Chef time! Any cook worth his or her salt lives for meals like this.
One really nice thing about cooking at The Poort's house is that they have a well stocked pantry and a very decent kitchen garden. Herbs, fresh vegetable etc... So this is what I made.
Recipe:
I boiled about 1 lb Whole Wheat spaghetti noodles. Diced up 1/2lb of bacon and started to render them in a large pan. Once crisp I added in about 15 or so walnut sized cherry tomatoes fresh from the garden that I had sliced in half to some of the rendered bacon fat. Some Fresh Black Pepper. A pinch of Sea Salt. About 10 sliced Kalamata Olives. I found some fresh Oregano and Chives in the garden, chopped and added that along with 2 medium sized Garlic Cloves, chopped.
Once the tomatoes where starting to look soft and well cooked down I added the bacon back in. I added about 3/4 of the cooked and now drained pasta to the tomato sauce. I added a few ounces of crumbled Feta Cheese to the pasta. Once incorporated It was time to plate.
